Rice pudding with raisins

Pear Mango Salsa

Makes 6 servings.




Ingredients

2 medium pears, peeled, cored, and cut into small chunks
½ mango, peeled, seeded, and cut into small chunks
1⁄3 cup finely chopped yellow bell pepper
1⁄3 cup finely chopped red bell pepper
¼ cup finely chopped red onion
1 small jalapeƱo pepper, seeded and finely chopped
3 tablespoons finely chopped fresh cilantro
2 teaspoons vegetable oil lime juice to tastesalt to taste


Preparation

1.  Mix all ingredients in a bowl and refrigerate in a covered container for at least 30 minutes or
up to 3 hours before serving.
2.  Serve with tortilla chips, quesadillas, or grilled or roasted meats or fish.
